Description

Chicken and vegetables stir fried to perfection, with a classic oyster/soy sauce and Chow Mein noodles.

Ingredients

The noodles: 12 ounce Chow Noodles (Dry or Fresh) cooked according to the package directions for al dente. Drain well and set aside. The sauce: 2 tablespoons soy sauce 2 tablespoons oyster sauce 1 tablespoons sesame oil ½ cup water (The above amounts are for the original recipe) but I always double the sauce, so 4 tablespoons soy sauce, 4 tablespoons oyster sauce, 2 tablespoons sesame oil and 1 cup water. The Chicken: 1 pound boneless chicken cut into bite-sized pieces 2 teaspoons cornstarch Kosher salt (To taste) I used about ½ teaspoon. Black pepper (To taste) 1 use about half teaspoon. Vegetables: 2 tablespoons vegetable oil (To saute the chicken) ¼ cup vegetable oil (To saute the the vegetables and complete cooking) 3 cups thinly sliced gagable (I use 2 cups cabbage and 1 cup bean sprouts) 2 stalks celery sliced thinly 2 cups shredded carrots 6 whole green onions, roughly chopped 2 cloves minced garlic

Instructions

Cook noodles according to the package for al dente, drain well and set aside. In a small bowl combine soy sauce, oyster sauce, sesame oil, water and whisk well, set aside. In a medium sized bowl add the chicken, sprinkle the cornstarch, salt & pepper and toss to coat. Add a tablespoon of soy sauce to the chicken, toss to coat again and set aside. In a large skillet of medium high heat add 2 tablespoon vegetable oil, bring oil to temp about a minute or two, add the chicken and cook, stirring frequently and chicken is cooked through, about 6 minutes or so depending on how thick your chicken pieces are. Remove chicken to a plate and set aside. Add the ¼ cup oil to the skillet, add the cabbage (Or the cabedge and Bean Sprouts if using) carrots, celery, green onion and garlic. Cook stirring frequently, till slightly softened and slightly browned, will take 10-15 minutes. Add the chicken and noodles, sauce and stir fry until well combined and noodles have absorbed the sauce. Taste and add salt & pepper if needed and Serve.
